Dark Chocolate Cocomond Bars

9 Servings / Prep Time: 20 minutes / Cook Time: 1 hour in freezer

Ingredients

1 cup almond slivers
1 cup unsweetened shredded coconut (finely shredded if possible)
6 T coconut oil
¾ cup macadamia nuts
2 teaspoons avocado oil
1 oz unsweetened chocolate
0.5 oz cacao butter
2 T cocoa powder
½ teaspoon vanilla extract
2 T and 2 teaspoons honey
1/8 teaspoon pink Himalayan salt
Salt, for garnish

Directions

  1. Place parchment paper in square 8 x 8 pan. Pour almond slivers into pan and set aside.
  2. Put shredded coconut into food processor and process until super fine, may require up to 5 minutes of processing if starting with coarse flakes. Add in 6 T coconut oil and process until smooth. Pour into pan and mix with almond slivers. Spread evenly. Place in freezer.
  3. Put macadamia nuts in food processor. Process until fine crumbs. Add avocado oil and process until smooth. Set macadamia nut butter aside.
  4. Put unsweetened chocolate and cacao butter in double boiler on low heat (or heat-proof bowl set over pan of barely simmering water). Heat until melted. Remove from heat.
  5. Add macadamia nut butter, cocoa powder, vanilla, honey and salt. Whisk until blended.
  6. Pour over the coconut and almond layer. Spread evenly.
  7. Sprinkle salt evenly over top. Return to freezer for 1 hour to set.
  8. Cut into 9 even squares. Store in freezer. Best served directly from freezer as chocolate will soften as it warms to room temperature.
